Why we left sugar out

Sweetness is personal. What tastes balanced to one person tastes flat to another, and what's "just right" in a hot latte can taste too sweet once it's poured over ice. Once sugar is mixed into the powder itself, that decision has already been made for you, batch after batch, cup after cup.

Leaving it unsweetened means the blend stays flexible. You can drink it clean, add a spoonful of honey, use oat milk that's naturally a little sweet on its own, or fold it into a dessert recipe that already has its own sugar content, without stacking sweetness on top of sweetness.

It also means the ingredient label stays short: pandan extract and matcha. Nothing else added.

A note on clumping

Since there's no sugar or filler to help the powder dissolve, whisking technique matters a bit more. Adding a small amount of hot water first and frothing until smooth, before adding ice or milk, gives the cleanest result and avoids the powder settling at the bottom of the glass.
